Chocolate & Cashew Energy Balls

Ingredients

  • 1 cup cashew nuts – soaked in boiling water for 1 hour & drained
  • 3 tablespoons cacao powder (regular cocoa also works)
  • ½ cup raisins
  • 1/3 cups desiccated coconut, plus extra for rolling
  • 2/3 tablespoons agave syrup
    (or substitute with maple
    syrup/honey)

Method

Place all the ingredients into a food processor & blitz for 2-3 minutes until a thick, slightly sticky dough is formed.
Divide mixture into 20 pieces and roll into balls. Tip: this is easier with slightly damp hands. Roll into desiccated coconut. These can kept at room temperature, or in the fridge if preferred. They will last for up to one week.
