1 cup shelled pistachio nuts, soaked in boiling water for 1 hour & drained; plus ¼ cup finely ground pistachio nuts for rolling
2 tablespoons cacao powder (regular cocoa also works)
½ cup raisins
2 tablespoons finely milled flaxseed
Finely grated zest of 1 lime & juice of half a lime
2-3 tablespoons agave syrup (or substitute with maple syrup or honey)

Place all the ingredients into a food processor & blitz for 2-3 minutes until a thick, slightly sticky dough is formed.
Divide mixture into 15 pieces and roll into balls. TIP: this is easier with slightly damp hands. Roll into ground pistachio.
These can kept at room temperature, or in the fridge if preferred. They will last for up to one week.
