Pistachio & Lime Energy Balls

Ingredients

  • 1 cup shelled pistachio nuts, soaked in boiling water for 1 hour & drained; plus ¼ cup finely ground pistachio nuts for rolling
  • 2 tablespoons cacao powder (regular cocoa also works)
  • ½ cup raisins
  • 2 tablespoons finely milled flaxseed
  • Finely grated zest of 1 lime & juice of half a lime
  • 2-3 tablespoons agave syrup (or substitute with maple syrup or honey)

Method

  • Place all the ingredients into a food processor & blitz for 2-3 minutes until a thick, slightly sticky dough is formed.
  • Divide mixture into 15 pieces and roll into balls. TIP: this is easier with slightly damp hands. Roll into ground pistachio.
  • These can kept at room temperature, or in the fridge if preferred. They will last for up to one week.
