Purple Sprouting Broccomole

Ingredients

This tasty Purple Sprouting Broccomole dip is great for crudités, and also works well on bread or crackers. 

  • Purple sprouting, around 300g, roughly chopped
  • 1 teaspoon chopped fresh chilli, or dried chilli flakes
  • Juice of 1 lime
  • Sea salt & pepper
  • 1 tablespoon olive oil
  • 1 small bunch fresh coriander, roughly chopped, including stalks
  • 2 tomatoes, diced into small chunks
  • 4 spring onions or 1 small red onion, finely chopped

  • Chopping board
  • Knife
  • Food processor

Method

Firstly cook the purple sprouting. The stalks will take a little longer than the florets. You can steam or cook in boiling water. Drain & run under cold water. This stops it cooking further & also keeps the lovely bright colour. Drain on kitchen paper & to absorb the moisture.

In a food processor, or using a blender; whizz up the broccoli with lime juice, coriander, chilli & olive oil until smooth.

Now stir in the tomatoes & onion & season to taste.
